This document is a general overview in the vast fields of ethnology which represents one of the branches of zootechnics which mainly concerns the zoological (systematic) and zoo-technical classification (profile, aptitudes according to well-defined criteria) of the animal kingdom by focusing our interest on the process of evolution over millions of years and intra-species differentiations under the action of human societies. Knowing that the genome of species is unique, and cannot be reconstructed by man in the event of the disappearance of one of them. Whereas that of races, it can be modified according to the orientation led by the Man or by environmental conditions. To this end, four chapters address the preliminary data to define all the notions prior to understanding the classifications of animal species and breeds, their standard, as well as the reasons for their evolution over time linked to socio-economic and particularities to consumer expectations.
